Jeera/Zeera Rice Recipe

Jeera/Zeera Rice is very easy to prepare in few minutes.It is the flavorful rice and goes well with most of the gravies. Usually i prepare dal with this Jeera Rice.My family loves to have Vegetable rice/Vegetable Pulav and Jeera Rice.
 
Ingredients To Prepare Jeera Rice :

  • 1 Cup Basmati Rice
  • Salt
  • 1 1/2 tbsp Butter or Ghee
  • 2 inch piece Cinnamon
  • 1 Bay leaf
  • 1 Clove
  • 1 Star anise(optional)
  • 2 tsp Cumin seeds/Jeera seeds
  • Onion(optional)
Method To Prepare Jeera Rice :
  • Wash and soak basmati rice in water for 20-30 minutes. Drain and keep it aside.
  • Heat butter or ghee in a pan, add cloves, cinnamon and bay leaf, saute for a few seconds and then add jeera seeds.
  • When jeera sizzles, add the drained rice and fry on medium heat until the rice is well coated with the ghee/butter.
  • Add 2 cups of water and needed salt. Taste the water to check for salt.
  • When water starts boiling, lower the heat and cook covered until the rice is soft.
  • serve hot with any gravy side dish of your choice. Dal, paneer gravies, mushroom gravies.
  • If you want you can garnish with fried onions.

Vegetable Pulav/Veg Pulao Recipe

Vegetable Pulao or Veg Pulao recipe is very easy to cook and timing consuming dish.I usually make this vegetable pulao when i want to cook something sweet dish.This Vegetable rice is mainly content variety of vegetables. Here is the ingredients and method to cook Veg pulav/Vegetable Rice/Vegetable Pulav.

Ingredients To Prepare Vegetable Pulav:

  •  1/2 cup Basmati Rice (long grained rice)
  • 1 medium Onion, finely chopped
  • 1 small Tomato, finely chopped
  • 1/4 cup Green Peas (mutter), fresh or frozen
  • 3 tablespoons finely chopped French Beans
  • 1/4 cup finely chopped Carrot
  • 1 small piece of Bay Leaf
  • 1-inch piece of Cinnamon
  • 2 Cloves
  • 1/4 teaspoon Garam Masala Powder
  • 1/8 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chilli Powder
  • 2 tablespoons finely chopped Coriander Leaves
  • 2 tablespoons Oil
  • 1 teaspoon Ghee
  • 1 cup Water
  • Salt to taste
Methods To Prepare Vegetable Pulav :
  • Wash rice and soak it in water for 15-20 minutes. Drain and keep aside until needed.
  • Heat ghee or oilin a pressure cooker on low flame. Add bay leaf, cinnamon, clove, and sauté for 30 seconds.
  • Add onion and sauté until it turns light brown or for approx. 2 minutes.
  • Add chopped tomato, green peas, french beans and carrot.Stir-fry them for approx. 2 minutes.
  • Add soaked (drained) rice, garam masala powder, turmeric powder, red chilli powder and salt.
  • Stir-fry them for approx. 2 minutes.
  • Add 1 cup water and mix well.
  • Close the lid and cook over medium flame for 2 whistles. When 1st whistle is completed, reduce the flame to low and cook until another whistle. Turn off flame.
  • Let it cool at room temperature until pressure inside cooker comes down naturally. Open the lid carefully and fluff the rice with a fork. Transfer it to a serving bowl and garnish with fresh coriander leaves.

Rava Upma/Suji Upma Recipe

Rava Upma is also called as "Suji Upma" & it  is a popular breakfast dish in India.This is very easy to make at home by mixing roasted rava.Few peoples likes to cook this with mixed sauteed vegetable n few likes to cook Plain Upma.I like to cooj vegetable Upma.So here is the procedure :
 

Ingredients For Rava Upma/Suji Upma :

  • 3/4 cup Rava (Sooji/Semolina)
  • 1/4 teaspoon Mustard Seeds
  • 1 teaspoon Chana Dal (optional)
  • 1 teaspoon Urad Dal (optional)
  • 1 pinch Asafoetida
  • 1-2 sprigs Curry Leaves
  • 1 medium Onion, finely chopped
  • 1/2 teaspoon grated Ginger
  • 2 Green Chilli, chopped
  • 3 tablespoons Carrot, finely chopped
  • 2 tablespoons Fresh or Frozen Green Peas
  • 3 tablespoons Capsicum, finely chopped
  • 1 large Tomato, finely chopped
  • 5-6 fried Cashew Nuts (optional)
  • 2 tablespoons finely chopped Coriander Leaves
  • 1 teaspoon Lemon Juice
  • Salt to taste
  • 1 tablespoon Ghee (Clarified Butter)
  • 2 tablespoons Cooking Oil
  • 1 1/2 cups Water
Method To Prepare Rava Upma/Suji Upma :
  • Heat 1 tablespoon ghee in a kadai or heavy based pan. Add rava in it.
  • Roast it on low flame until it turns light brown, approx 4-5 minutes (time required to roast it may vary based on size and thickness of kadai). Keep stirring continuously. When done, transfer to a plate.
  • Heat 2 tablespoons oil in same kadai over medium flame. Add mustard seeds. When they begin to sputter, add chana dal, urad dal, asafoetida and curry leaves. Cook until dals turn light brown.
  • Add chopped onion, grated ginger and chopped green chillies and sauté for 1-2 minutes until onion becomes translucent.
  • Add chopped carrot, green peas, chopped capsicum, chopped tomatoes and salt. Mix well and sauté for 2-3 minutes.
  • Add water and bring the mixture to boil, it will take around 2-3 minutes.
  • Add roasted rava and lemon juice; mix well.
  • Stir continuously for 1-2 minutes to avoid lumps.
  • Cover it with a lid and cook on low flame until mixture turns thick, it will take around 3-4 minutes. Stir in between regular intervals.
  • Turn off heat and remove the lid. Let it settle for 10 minutes before serving.
  • Add fried cashew nuts and coriander leaves, mix well and transfer rava upma to a serving plate.
