Jeera/Zeera Rice Recipe

Jeera/Zeera Rice is very easy to prepare in few minutes.It is the flavorful rice and goes well with most of the gravies. Usually i prepare dal with this Jeera Rice.My family loves to have Vegetable rice/Vegetable Pulav and Jeera Rice.
 
Ingredients To Prepare Jeera Rice :

Jeera/Zeera Rice

  • 1 Cup Basmati Rice
  • Salt
  • 1 1/2 tbsp Butter or Ghee
  • 2 inch piece Cinnamon
  • 1 Bay leaf
  • 1 Clove
  • 1 Star anise(optional)
  • 2 tsp Cumin seeds/Jeera seeds
  • Onion(optional)
Method To Prepare Jeera Rice :
  • Wash and soak basmati rice in water for 20-30 minutes. Drain and keep it aside.
  • Heat butter or ghee in a pan, add cloves, cinnamon and bay leaf, saute for a few seconds and then add jeera seeds.
  • When jeera sizzles, add the drained rice and fry on medium heat until the rice is well coated with the ghee/butter.
  • Add 2 cups of water and needed salt. Taste the water to check for salt.
  • When water starts boiling, lower the heat and cook covered until the rice is soft.
  • serve hot with any gravy side dish of your choice. Dal, paneer gravies, mushroom gravies.
  • If you want you can garnish with fried onions.

Vegetable Pulav/Veg Pulao Recipe

Vegetable Pulao or Veg Pulao recipe is very easy to cook and timing consuming dish.I usually make this vegetable pulao when i want to cook something sweet dish.This Vegetable rice is mainly content variety of vegetables. Here is the ingredients and method to cook Veg pulav/Vegetable Rice/Vegetable Pulav.

Ingredients To Prepare Vegetable Pulav:

  •  1/2 cup Basmati Rice (long grained rice)
  • 1 medium Onion, finely chopped
  • 1 small Tomato, finely chopped
  • 1/4 cup Green Peas (mutter), fresh or frozen
  • 3 tablespoons finely chopped French Beans
  • 1/4 cup finely chopped Carrot
  • 1 small piece of Bay Leaf
  • 1-inch piece of Cinnamon
  • 2 Cloves
  • 1/4 teaspoon Garam Masala Powder
  • 1/8 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chilli Powder
  • 2 tablespoons finely chopped Coriander Leaves
  • 2 tablespoons Oil
  • 1 teaspoon Ghee
  • 1 cup Water
  • Salt to taste
Methods To Prepare Vegetable Pulav :
  • Wash rice and soak it in water for 15-20 minutes. Drain and keep aside until needed.
  • Heat ghee or oilin a pressure cooker on low flame. Add bay leaf, cinnamon, clove, and sauté for 30 seconds.
  • Add onion and sauté until it turns light brown or for approx. 2 minutes.
  • Add chopped tomato, green peas, french beans and carrot.Stir-fry them for approx. 2 minutes.
  • Add soaked (drained) rice, garam masala powder, turmeric powder, red chilli powder and salt.
  • Stir-fry them for approx. 2 minutes.
  • Add 1 cup water and mix well.
  • Close the lid and cook over medium flame for 2 whistles. When 1st whistle is completed, reduce the flame to low and cook until another whistle. Turn off flame.
  • Let it cool at room temperature until pressure inside cooker comes down naturally. Open the lid carefully and fluff the rice with a fork. Transfer it to a serving bowl and garnish with fresh coriander leaves.

Rava Upma/Suji Upma Recipe

Rava Upma is also called as "Suji Upma" & it  is a popular breakfast dish in India.This is very easy to make at home by mixing roasted rava.Few peoples likes to cook this with mixed sauteed vegetable n few likes to cook Plain Upma.I like to cooj vegetable Upma.So here is the procedure :
 

Ingredients For Rava Upma/Suji Upma :

  • 3/4 cup Rava (Sooji/Semolina)
  • 1/4 teaspoon Mustard Seeds
  • 1 teaspoon Chana Dal (optional)
  • 1 teaspoon Urad Dal (optional)
  • 1 pinch Asafoetida
  • 1-2 sprigs Curry Leaves
  • 1 medium Onion, finely chopped
  • 1/2 teaspoon grated Ginger
  • 2 Green Chilli, chopped
  • 3 tablespoons Carrot, finely chopped
  • 2 tablespoons Fresh or Frozen Green Peas
  • 3 tablespoons Capsicum, finely chopped
  • 1 large Tomato, finely chopped
  • 5-6 fried Cashew Nuts (optional)
  • 2 tablespoons finely chopped Coriander Leaves
  • 1 teaspoon Lemon Juice
  • Salt to taste
  • 1 tablespoon Ghee (Clarified Butter)
  • 2 tablespoons Cooking Oil
  • 1 1/2 cups Water
Method To Prepare Rava Upma/Suji Upma :
  • Heat 1 tablespoon ghee in a kadai or heavy based pan. Add rava in it.
  • Roast it on low flame until it turns light brown, approx 4-5 minutes (time required to roast it may vary based on size and thickness of kadai). Keep stirring continuously. When done, transfer to a plate.
  • Heat 2 tablespoons oil in same kadai over medium flame. Add mustard seeds. When they begin to sputter, add chana dal, urad dal, asafoetida and curry leaves. Cook until dals turn light brown.
  • Add chopped onion, grated ginger and chopped green chillies and sauté for 1-2 minutes until onion becomes translucent.
  • Add chopped carrot, green peas, chopped capsicum, chopped tomatoes and salt. Mix well and sauté for 2-3 minutes.
  • Add water and bring the mixture to boil, it will take around 2-3 minutes.
  • Add roasted rava and lemon juice; mix well.
  • Stir continuously for 1-2 minutes to avoid lumps.
  • Cover it with a lid and cook on low flame until mixture turns thick, it will take around 3-4 minutes. Stir in between regular intervals.
  • Turn off heat and remove the lid. Let it settle for 10 minutes before serving.
  • Add fried cashew nuts and coriander leaves, mix well and transfer rava upma to a serving plate.

Palak Dal Recipe | How To Prepare Palak Dal | Spinach Dal Recipe


Palak Dal/Spinach Dal
is a very simple and easy to prepare.Also good to have fresh palak in our daily life as it is loaded with nutrition.With Palak we do so many recipe like Palak Paneer,Aloo Palak etc.I would like to add onion,garlic and chillies in this palak recipe.

Ingredients for Dal Palak Recipe

  •     Spinach/Palak finely chopped 15-20 leaves
  •     Split green gram skinless (dhuli moong dal) 3/4 cup
  •     Turmeric powder 1/2 teaspoon
  •     Asafoetida a pinch
  •     Oil 2 tablespoons
  •     Cumin seeds 1 teaspoon
  •     Garlic chopped 6-8 cloves
  •     Ginger chopped 1 inch piece
  •     Green chillies seeded and chopped 2
  •     Onion chopped 1 medium
  •     Salt to taste
  •     Lemon juice 1 teaspoon

How To Prepare Palak Dal :

  • Cook moong dal with half the turmeric powder and asafoetida till soft. Heat oil (or ghee) in a pan.
  • Add cumin seeds, garlic, ginger, green chillies and sauté for one minute. Add onion and continue to sauté till onion gets lightly browned.
  • Add spinach and sauté for half a minute. Add the remaining turmeric powder and stir. Add dal and mix well.
  • Add one cup water and salt and stir. Add lemon juice, mix and serve hot.

Coconut Poli/ Naralachi Poli Recipe- Easy Sweet Poli

 Coconut Poli is also called sweet poli and its very easy to prepare.I love to prepare this coconut poli.
Usually i will prepare twice in a month & my family member also love this sweet poli or naralachi poli.So i feel very happy to prepare this sweet also it takes less time to prepare.

Ingredients To Prepare Coconut Poli :(yield 5-6 thin polis)

Naralachi Poli/Coconut Poli
  • All purpose flour(Maida):1/2 cup
  • Oil:2 tbsp
  • Coconut grated:1/2 cup
  • Jaggery(powder):1/2 cup
  • Cardamom Powder:a pinch
  • Salt: a pinch
  • Oil/ghee:5-6 tbsp

Method To Prepare Coconut Poli :
    •  Heat the pan and add coconut, jaggery and cook it until the jaggery melts.
    •  Add cardamom powder to make the round balls and keep aside.
    •  Take a bowl and add all purpose flour, wheat flour, salt, 1 tbs oil and mix thoroughly to make a soft dough and apply oil and rest it for 5 mins.
    •  Take the small dumpling of the dough and make the small poori using hand on the oil applied polythene sheet.
    •  Stuff the poori with the coconut jaggery stuffing mixture and close the edges and press it again on the polythene sheet.
    • Heat the tawa and cook the poli on both sides using ghee.
    •  Now the sweet/ Naralachi/coconut poli is ready to serve.

    Green Chutney Recipe



    Green chutney made with fresh mint, coriander, green chillies, lemon juice for tang and some cumin seeds.This green chutney you should always have in your refrigerator.You can use it as an accompaniment to a number of starters and snacks.

    Ingredients To Prepare Green Chutney Recipe:
    • Fresh coriander leaves chopped 1 cup
    • Fresh mint leaves chopped 1/2 cup
    • Green chillies chopped 2-3
    • Black salt (kala namak) to taste
    • Sugar 1/4 teaspoon
    • Lemon juice 1 teaspoon
    Method To Prepare Green Chutney :

    • Process the fresh coriander, fresh mint and green chillies in a blender to a smooth paste with a little water if required.
    • Add the black salt and sugar. Transfer to a bowl, add the lemon juice and mix well.

    Aloo Tikki Recipe | Potato Patties




    Aloo tikki  or Potato Patties is simple and easy recipe uses shallow fry to get crispy, soft and spicy.The mixture of boiled potatoes and green peas is formed into shape .This makes great evening snack or in party as starter.


     Ingredients To Preapare Aloo Tikki/Potato Patties:

    • 4 large size Potatoes, boiled
    • 1/2 cup fresh or frozen Green Peas
    • 4 tablespoons + 4 tablespoons Dry Breadcrum
    • 1 tablespoon Corn Flour
    • 1 teaspoon grated Ginger
    • 2 tablespoons finely chopped Coriander Leaves
    • 2 Green Chillies, seeded and finely chopped
    • 1/2 teaspoon Garam Masala Powder
    • 1/2 teaspoon Red Chilli Powder
    • 1 teaspoon Lemon Juice or Dry Mango Powder
    • 1/2 teaspoon Sugar, optional
    • Salt
    • Oil

     How To Prepare Aloo Tikki/Potato Patties :
    • Boil potatoes in pressure cooker or in a pan until soft. Peel and mash them. Boil peas in boiling water for 5 minutes. Drain water and transfer them to a small bowl.
    • Take mashed potatoes in another bowl. Add boiled peas, 4 tablespoons breadcrumbs, corn flour, grated ginger, coriander leaves, finely chopped green chilli, garam masala powder, red chilli powder, lemon juice, sugar and salt
    • Mix them  to prepare smooth dough like mixture. Divide mixture into 12 equal portions and roll them into small size balls.
    • Take one ball and gently press it between your palms and make a round shaped 1/2-inch thick pattie. Take 4 tablespoons breadcrumbs in a plate. Coat prepared pattie with breadcrumbs on all sides by rolling it in breadcrumbs filled plate.
    • Repeat steps 7 and 8 for remaining balls and prepare remaining patties. 
    • Heat non-stick flat pan (tawa) or griddle to shallow fry patties. When pan or griddle is hot enough, drizzle 2-3 teaspoons oil over it. Put 3-4 patties over oil and cook until bottom surface turn golden brown.
    • Flip each pattie up side down, drizzle some oil around its edge and cook until second side also turns golden brown. Based on the size of your pan, you can shallow fry more than 3-4 tikkis at a time.
    • Transfer prepared tikkis to a plate. Serve hot and crispy aloo tikkis with tomato ketchup or greenchutney.
